Balsamic strawberries with ricotta

In this dessert, balsamic vinegar plays up the sweetness of strawberries.  The first time I heard of this dessert, I was pretty skeptical until the first bite.  Balsamic strawberries can be enjoyed alone or used to dress up other creamy Italian desserts. I like this recipe because it only has 4 ingredients, and it can be made ahead.

What you will need:

Edible components
12 ounces of strawberries, washed
1 cup of balsamic vinegar
1 cup of ricotta cheese
1 heaping tablespoon of sugar

Non-edible components
Cutting board
Knife
Large bowl
Plastic wrap
4 serving dishes or bowls

How to do it:
1. Cut off the tops of the strawberries and slice them in half.
2. Pour the balsamic vinegar into the bowl and add the strawberries. Cover with plastic wrap and refrigerate for 1 hour.
3. Pour off the excess balsamic vinegar from the bowl and re-cover the strawberries. Return the bowl to the refrigerator for another 3 hours.
4. When you are ready to assemble the dessert, distribute the ricotta evenly among the 4 dishes.  Sprinkle the sugar on the strawberries and spoon the strawberries onto the ricotta.
5. Enjoy!

  2. I am not much of a ricotta person but am all for cream cheese so with that substitute, this dish will be a real hit with me :D
    Thanks!

    1. That's a good idea; I bet it would work well with marscapone, too.
